1. Spread large lettuce leaves on the bottom of a salad bowl to cover it completely.
2. Cleanse and peel the mangoes, take out the pits and cut the pulp into thin strips. Place the mango strips on top of lettuce leaves.
3. Cleanse and peel the avocado pears, slice them finely and place on top of the mango strips.
4. Sprinkle the avocado slices with the juice of one lemon half to prevent the browning.
5. Cut the chicken breast in strips and place on top of the avocado slices.
6. Mix orange juice, olive oil, avocado oil, mustard and the remaining lemon juice into a separate mixing bowl. Add salt and pepper and blend until smooth.
7. Dress the salad and garnish it with pine nuts.
