soy milk
2 cups
Blue agave syrup
to taste

** for extra sweetness, add a drop of light honey.

Cooking method

1. Rinse and scrub the pine apple before cutting it. Slice off the peel and cut of the green leaves and the stem end.  Remove the core. Cut into chunks.

2. Place pine apple chunks into a blender together with the blackcurrants, mint leaves and soy milk. You can replace soy milk with more traditional dairy milk to make your smoothie richer in taste and calories. 

3. Blend the ingredients for 5 minutes, then add the agave syrup and serve with a mint leaf to garnish your drink.
